His Punjabi roots shine through in the comforting saag paneer, 36 hour slow simmered Dal Makhani, charcoal roasted mashed Eggplant Bhartha. His love for seafood from the Malabar coast is captured in the Alaskan Halibut Kerela Fish Curry, Tiger Prawns Molly, Goan Mussels curry. Having spent over 15 years in Chicago interesting cross over dishes have emerged. Indian style tacos – curried lamb, chicken vindaloo, tamarind pork belly, Amritsari fish are a favorite. Tamarind glazed BBQ baby back ribs fall off the bone, Hawaiian black sea salt and onion seed crusted Tandoori Chilean seabass melts like butter. Charcoal grilled prime ribeye with cumin flavored potatoes puts a spin on the midwestern classic.
