chicken Chef Moni’s recipes are the heart and soul of the restaurant. His passion and 40 years of experience in Indian, French and Continental cuisine drives the culinary vision of the restaurant. He was the Executive Chef of the Oberoi’s in New Delhi (www.oberoihotels.com), one of the most prestigious hotels in India. He started his hotel career working as Executive Sous Chef at The Taj in Bombay. Before joining the hotel industry he taught at the prestigious Institute of Hotel Management in Delhi.
In his distinguished career, Chef Moni has served Indira Gandhi, Late Prime Minister of India; H.E. Olaf Palme Prime Minster of Sweden, H.E. Amir of Kuwait, H.E. Chancellor of Germany Helmut Kohl, Shah of Iran, King Abdullah of Jordan and H.E. President of UAE among others.
Kama Indian Bistro was started to serve authentic Indian food. The food is not fusion or a modern take on Indian food, it is quite simply authentic. Indian food has evolved over centuries. Indians adapted the cuisine as the ruling dynasties and influences changed - the Turks, Afghans, Persians, Mongols and Europeans. Lately this trend is continuing with the adoption of Chinese and Tibetan style of cooking.

Our menu has a few selected dishes that represent the evolving nature of Indian cuisine. For example the Lobster Kama is a fusion of Indian and Traditional French. Chilly crispy potato is a derivative of modern American and Indian, a spicy take on fries. Chicken Lemon Tadka is influenced by French and Continental cuisine. Chilly Chicken is a classic from Delhi which combines Chinese and Indian.

THE INGREDIENTS - Fresh

We marinate our meats for over 24 hours; make our Garam Masala and Paneer in house; prepare our sauces from fresh ingredients, no cans!! The menu is authentic Indian and the quality that is available only in “Select Places” in Delhi. Chef Moni has also added elements from cuisines around the globe including French, Chinese, and Middle Eastern.
